Thanks for the great recipe . I made these for my family picnic for the 4th of July and they were a hit.I'm always on the lookout for ways to use carrots coz they are so nutritious plus they are one of the cheapest food you can buy.With these being baked instead of fried i don't have to worry about the fat ; )

In reply to A Virtual Vegan. Your shoes will be great when running to catch the Trolley Cars! You'll love it there. Be sure to find your way to the Ocean & if you've got time, take a day trip to the Napa Valley. You'll find lots of wonderful places to eat there too (we love Calistoga the best with our 2nd fave being St. Helena which is just before Calistoga. There's a magical Dean & Deluca store there with everything (food, wine, cigars, kitchen gadgets and, and, and...) on your way into St. Helena + there's another nice grocery store just up the way Sunshine Market & if you make it to Calistoga there's a wonderful local grocery store Cal Mart Specialty Grocery & Deli right on Lincoln Avenue which is the main street there. It''s one of our favorite areas in CA.. Enjoy! Making this tonight for dinner - can hardly wait!

I love falafels! Don't make them often enough, maybe because couple of the kiddos are finicky with them. Love your seasoning and veggie combo in these, Mel... lots of flavor going on plus super colorful to boot!!
