Thank you for this recipe. I made it and it was quick and tasty. The only difference I added 1 tsp of Maca powder. Topped with Blueberries, granola and maple syrup. I will definitely make this again.

It works so well and there are only a few vegan and healthy pancake recipes that do. I even add protein powder to it and it doesn’t change the consistency either. Love it! Eating them right now as I write this comment.

Fabulous! I loved these pancakes. I’ve tried a few recipes and there are only a few recipes that work for me but these were great. I also like the idea of not adding sugar as my toppings were sweet

Not sure what everyone else is doing when they say this recipe doesn’t work because these are just perfect for us. They work every single time without fail.
I can only think they aren’t weighing the flour properly. The batter is never runny for us. Thanks for a great recipe Mel.

They were ok. Followed the 2 pancakes x2 directions (yes, I measured everything), cooked on pan at 350. Like several other reviewers said, the batter came out runny and the pancakes fell apart when flipped. Let them cook a little longer on each side and they came out flakey, which was the best thing about them.

I can't say without more info. You're either not measuring the ingredients correctly or using substitutions. Not letting the batter sit for 10 minutes to thicken might also be contributing. Using equal quantities of flour and milk like this recipe does can't create a watery batter.

Glad you enjoyed them Alicia! The resting just allows the gluten to relax so you get a slightly more tender pancake. It doesn't make a huge difference. As for protein powder, I have no idea. I've never cooked with it before.

This recipe was amazing!!
I’ve always struggled with vegan pancakes but I followed the exact measurements and instructions just didn’t leave it for 10 minutes and they were still fine. I’m not sure if this will affect them or not but still we’re great. Could protein powder work in the recipe?
Thanks!

glad they turned out ok! The measurements are correct. 63 grams is about half a cup of flour. A full cup is 125 g. ¼ of a cup of flour weighs 31.25g. Those are standard flour conversions. Are you sure you're measuring correctly? In cups if you scoop you end up with too much flour. To correctly measure a cup of flour you need to aerate the flour with a whisk then spoon gently into the cup and level it off with a knife without shaking it down or compacting it. That's the reason I always recommend weighing ingredients like flour as with cups you will never have exactly the right amount and results will not be consistent.
And the "weird one" is a slash to divide the cup and grams measurements.
