Delicious! I used a tiny bit of olive oil when cooking the onion and baked it in a casserole dish. Even my daughter---who doesn't often like vegetables--liked it.

This is delicious. I used olive oil and vegan margarine to fry the onions, then stirred in the mashed potatoes and cooked cabbage, turned it into an oiled casserole and baked in the oven. Thank you!

Literally any vegetable will work in this, so feel free to throw in anything you like. The vegetables just need to be cooked first. It's perfect for using up leftovers. Whenever I cook a roast dinner I always cook double veg and save half for bubble and squeak the next day. I even throw in chopped up leftover roast potatoes.You don't even really need to follow the quantities I give. I tend to just stir in as much veg as I can comfortably fit in the mashed potato and bake. It's just a guide and it's lovely that it's different every time!
