Made this omitting oil, salt and vegan butter and it was absolutely delicious! Leftovers were eaten for breakfast! My meat eating husband also approved!

This is such a wonderful recipe!! I cook this risotto atleast once a month. Being vegan I so miss those creamy yummy risottos. But this does all of that and more.
Thankyou so much for sharing this recipe it's so easy to follow and not a bit overwhelming.
