Friend wants cake for her bday but her friend is allergic to all nuts. Can this cake be made without the nuts?

In reply to Jenny. I think if it's only 1 inch deep it might be too shallow. You could always have another pan (or muffin pan handy) and ready greased etc, then put any excess batter in there if necessary. You can freeze the extra ones for another day.

I am going to make this next week for a friend birthday! I want to use my quarter sheet. My 9x13 is only just over an inch deep. Will that work? Imagine it'll just fit in a 9x13 I'm wondering if mine 9x13 is too shallow?

In reply to Vanessa. Almost all grocery stores here sell it. I'm sure they probably have a list of stockists on their website if you want to check where it can be found in your local area. Any vegan cream cheese will do though if you can't find it.

Now that I have transitioned to a plant based diet I am on the look out for excellent vegan recipes and this is one of them! My daughter and I are long time dedicated bakers and love Hummingbird Cake so I gave it a try uncertain if it would be as good as a non-vegan version. It is as good or better. Shared with friends and they loved the cake. My daughter now wants this for her birthday next spring.
Don’t miss the eggs or dairy at all.

The best vegan cake I've ever made and just as good as any hummingbird cake I made pre-vegan. The balance of flavor and the spices are perfection.

Wow. Just wow. I'm from the South and haven't made hummingbird cake since I became vegan. This was everything I hoped and more.
