Summer wouldn't be summer without popsicles, and I know it's not technically summer yet, but we did have a brief spell of very nice sunshine-y weather last week.
We will just skip over the fact that as soon as I made these Strawberry Popsicles, the sun disappeared and the heavens opened. I mean, really? That'll teach me for getting over enthusiastic as soon as I see some sun.

Last year I made my Luscious Lemon Cheesecake Popsicles which are pretty amazing but are more of a decadent dessert type popsicle. So worth making....Here they are in all their glory:
These Strawberry Popsicles with Lime & Mint are light, really refreshing and super healthy.

These strawberry popsicles have only 3 essential ingredients:
- strawberries
- mint
- lime
Then there's optional maple syrup but that only needs to be used if your strawberries aren't already super sweet.
As we are at the beginning of the strawberry season now I find it necessary to add a little splash, but as summer progresses and the strawberries become sweeter and sweeter, that need will be no more and one ingredient less is always a good thing!
You will also need a popsicle mold.
My favourite popsicle mold
The popsicle mold I use is made by Onyx and although it's a little pricey as far as popsicle molds go, it will last a life-time. It's much more environmentally friendly than using the plastic ones. You can find it on Amazon here.
How to make Strawberry Popsicles
It's so easy to make your own popsicles in just a few easy steps.
Here's how:
Step 1 - Put some strawberries in a blender
Step 2 - Add some mint
Step 3 - Squeeze in some fresh lime juice
Step 4 - Add some maple syrup if needed for sweetness
Step 5 - Blend and pour into popsicle molds
Step 6 - Freeze
Make them kid friendly
To make the whole popsicle making process even simpler, you could make these popsicles with just strawberries and omit the mint and lime. This would make them a great refreshing snack for toddlers or young children.
What if I don't have a popsicle mold?
If you don't own a popsicle mold, now is a great time of year to invest one, or just pick up some wooden popsicle sticks and use disposable cups as molds. Problem solved!
These popsicles would make the perfect treat when you are feeling hot and bothered, or when you want something sweet but don't want to overindulge. They are also a fab way to use up any overripe strawberries you might end up with!

Strawberry Popsicles with Lime & Mint
Author:Ingredients
- 454g / 16oz / approx 15 large strawberries
- 1 small handful fresh mint leaves
- 1 lime
OPTIONAL
- 1 tablespoon maple syrup
RECOMMENDED EQUIPMENT
INSTRUCTIONS
- Put the strawberries and mint into a blender.
- Squeeze in the juice of the lime then blend until smooth.
- Taste and add a drop of maple syrup if not sweet enough for your liking then pulse the blender once more to incorporate.
- Pour into popsicle molds and freeze.
