This Creamy Mango Salad Dressing just kind of happened. I find my best recipes often start out that way.
I had neither the time nor the inclination to go grocery shopping but was hungry and craving something tasty. Out came the contents of the fridge and the store-cupboard and the idea of an Asian style noodle salad was born.
First I made the dressing and OMG it was good. I struggled to stop myself eating it all and knew that it had to feature in it's own post, so here it is!
The noodle salad recipe will follow at some point in the future. When? I don't know, as the pressure to post some pumpkin recipes is mounting.
I have spent the past few weeks developing some awesome recipes which feature the almighty pumpkin but they have taken longer than anticipated to get right, or the photo sessions didn't go to plan....or I got so fed up with eating pumpkin flavoured everything that I had to take a break.
Now I have got over my pumpkin hurdle and have a couple of recipes ready and waiting in the wings.
Who knows? .....You might even see one next!
Now back to my Creamy Mango Salad Dressing.
It is seriously good.

and did I mention delicious?
Serve it in Asian style noodle dishes, as a salad dressing, as a dip for raw veggies or chips, with veggie burgers, falafels, rice bowls, stir fries, Buddha bowls.....Or just slurp it straight from the spoon!

Creamy Mango Salad Dressing
Author:Ingredients
- 1 large ripe mango
- 1 tablespoon rice wine vinegar
- 1 tablespoon toasted sesame oil
- 1 tablespoon Tamari (the wheat free kind for gluten free)
- 1 tablespoon nutritional yeast
- 1 tablespoon grated fresh ginger
- 1/2 teaspoon salt
- water to thin as necessary
INSTRUCTIONS
- Peel and remove the stone from the mango.
- Add the mango and all of the other ingredients to a food processor or blender.
- Blend until smooth. If you prefer a thinner dressing add a drop of water to thin it slightly.
